Welcome to the Mellow Mink Blog!  We will be using our blog as an outlet to share news, updates, and musings from the Mellow Mink staff.  For the most part the blog will focus on our beers, events, and occasionally other news from the craft beer industry.

For our first blog post, I thought it would be cool to share some details and photos of our planned taproom.  We are currently in the process of completing our architectural and engineering plans for the build out, which we anticipate will begin this November.

Our tap room is designed to seat 80 people with room for around another 30 during busy times and events.  We will have 10 draft lines which will rotate through both sour and classic beer styles, although we intend to always have several sour and farmhouse style beers on draft at any given time.  We will also be serving sodas, fruited carbonated water, and a selection of Pennsylvania wines.  We plan to offer three different pour sizes, 4 oz, 8 oz, and 16 oz, as well as growler fills for most of our draft beers.  Our brewery is located in a plaza that contains seven restaurants within walking distance.  As such, we will be offering a very limited food menu and allowing our customers to bring in their own food.

Our bottling program will come online several months after the taproom opens and will exclusively feature sour and farmhouse beers.  All of our bottled beers will be naturally conditioned and unpasteurized.

It’s been 6 months since the launch of our Founder’s Club, and we still have some seats available.  If you are a sour beer fan, we definitely recommend checking it out, as the membership comes with exclusive beers, merchandise, discounts, and early access to all of our public bottle releases.

We are tremendously excited to be opening Mellow Mink in Mechanicsburg, PA.  It is our goal to create a top-class craft beer experience and destination within central Pennsylvania.  We hope you will follow our progress towards opening both here and on social media and come visit us once we open our doors.
